On February 7th, The Joel Bieber Firm wore red in support of the American Heart Association’s National Wear Red Day to raise awareness in the fight against heart disease.

Greetings!

       February is one of my favorite months. When I reviewed our eBlast for this month, I also was reminded of my grandmother’s favorite color of red. (I am giving you an example of how I can wander in my blog) Yes, this eBlast includes some of my entries from the archives of my blog. I am regularly asked where I get my ideas and I always take that as a compliment. I am just glad that I am not asked, “How did you wander there?”.
       In this eBlast, we highlight employees, include a recipe and one of our television ads; and we even have a picture of Doug Smith’s beard progression. Now that is worth the price of this… Wait a second, I was just reminded that this is free. Yes, it is worth free!
       Well, enough of my wandering. I hope you will enjoy our collection of stuff. Maybe even forward it to a friend. Time marches on and we will be back with our next eBlast in March.

Employee Spotlight: 
Kristin Taylor, Litigation Paralegal

Kristin Taylor was born and raised in Mechanicsville, Virginia near our Richmond office. Having grown up in the area, she values the different cultures and diversities that the city represents. 

Kristin has been with The Joel Bieber Firm for almost 2 years, starting as an Intake Assistant. She recently transitioned into a Litigation Paralegal position. She enjoys working with the litigation staff and the folks on the insurance defense side.

“I have had a few family members who were in need of Social Security so I enjoy assisting the attorney in any way possible so that our clients get the benefits and help they need and deserve.”

Outside of the office, Kristin busies herself by hiking, baking, being outdoors, swimming, working with Meals on Wheels and the Alzheimer’s Association, and caring for her newly adopted kitten, Kola.

Valentine’s Treat: Strawberry Cheesecake Minis
 
In celebration of the upcoming holiday, but also keeping in mind our New Years Resolutions, we found a mini-cheesecake recipe worth only 217 calories each… if you can resist eating more than one.
In a small bowl, beat two 8oz. packages of reduced-fat cream cheese until smooth.
Slowly stir in sugar substitute of your preference equal to 1/2 cup sugar, as well as 1/2 cup sugar (totaling 1 cup).
Slowly add 1 teaspoon vanilla extract, 1 lightly beaten egg, and 1/4 cup egg substitute to mixture.
Place 12 reduced-fat vanilla wafers individually into muffin cups and top with above mixture.
Bake at 350 degrees for 15-20 minutes until set. Allow to cool for 1 hour.
Using 12oz. can of Strawberry pastry filling, spoon topping on to each cheesecake. 
Refrigerate, serve and enjoy.
